Steps
Pastry Base
- Preheat oven to 180°C.
- In a mixing bowl, beat butter and sugar until pale and creamy.
- Add eggs one at a time, beating after each addition.
- Gradually fold in self-raising flour, mixing until a soft dough forms.
- Transfer the dough to a greased baking tin and spread evenly with your fingers.
- Use a fork to press the sides and make tiny holes in the base to prevent rising.
- Bake for 10-15 minutes, or until golden brown.
- Let the base cool completely before pouring in the hot custard.
Custard Filling
- Heat the Milk: In a pot over medium heat, bring 1½ cups milk close to a boil.
- In a separate bowl, mix custard powder and sugar together.
- Slowly whisk the custard-sugar mix into the hot milk.
- Stir continuously until the custard thickens into a smooth, creamy texture.
- Immediately pour the hot custard over the cooled pie base and spread evenly with a spatula.
- Let it cool for about 10 minutes before slicing.
