Ingredients

  •  2 large potatoes (boiled and peeled)
  •  1 medium onion, finely chopped
  • 1 – 2 tbsp mustard oil (or margarine/butter as a substitute)
  •  2 garlic cloves, minced
  •  Salt to taste
  •  Coriander leaves (handful, chopped)
  • Chilli powder (or chopped green chilli)
  •  A pinch of cumin and coriander powder (optional)

Steps

  1.   Mash the Potatoes: Boil the potatoes until soft, peel, and mash them in a bowl until smooth.
  2.   Add Flavours: Mix in the finely chopped onions and salt to taste.
  3.   Add the Oil: In a small pan, heat the mustard oil (or margarine/butter). Add the minced garlic and fry until golden brown.
  4.  Combine: Pour the garlic and oil over the mashed potatoes. Add the coriander leaves, chilli powder (or chopped green chillies), and the optional cumin and coriander powder.
  5.  Mix Well: Stir everything together until well combined and the flavors are evenly distributed.
