Ingredients
- 3 Onions, sliced (divide into 2 portions)
- 2 Carrots, sliced
- 600g Boneless Chicken, diced
- 1 Capsicum, chopped
- 400ml Chicken Stock
- 1 TSP Ginger & Garlic Paste
Seasoning
- 2 TBSP Sweet Paprika (optional)
- ½ TSP Chilli Flakes (or sliced chillies)
- Pinch of Salt and Pepper (to taste)
Sauce
- 1 TBSP Cornflour
- 1 TBSP Soy Sauce
- 1 TBSP Sweet Chilli Sauce
- 50ml Water
Instructions
- Sauté: Heat 4 TBSP oil in a pan over medium heat. Add 1 sliced onion, ginger & garlic paste, and diced chicken. Stir continuously.
- Cook: After 5 minutes, pour in the chicken stock and let it simmer for 8-10 minutes.
- Add Vegetables: Stir in the carrots and capsicum. Mix well to coat the vegetables.
- Season: Sprinkle in the sweet paprika, chili flakes, and half the salt and pepper.
- Onions Again: Once the vegetables have reached your preferred level of crispiness, add the remaining 2 onions to the pan for extra flavour and texture.
- Prepare the Sauce: In a small bowl, mix cornflour, soy sauce, sweet chili sauce, and water. Pour it into the pan.
- Final Seasoning: Adjust salt and pepper to taste. Stir well for 30 secs.
- Serve: Enjoy this flavourful stir-fry dish with your choice of side.
