Ingredients

For the Pastry Base:

  •  2 cups self-raising flour (Punjas Premium)
  •  125g butter (Anchor)
  •  ½ cup sugar
  •  2 eggs

For the Custard Topping:

  •  1½ cups milk (Anchor UHT)
  •  3 tbsp custard powder (Weikfield)
  •  ½ cup sugar

Steps

Pastry Base

  1. Preheat oven to 180°C.
  2. In a mixing bowl, beat butter and sugar until pale and creamy.
  3. Add eggs one at a time, beating after each addition.
  4. Gradually fold in self-raising flour, mixing until a soft dough forms.
  5. Transfer the dough to a greased baking tin and spread evenly with your fingers.
  6. Use a fork to press the sides and make tiny holes in the base to prevent rising.
  7. Bake for 10-15 minutes, or until golden brown.
  8. Let the base cool completely before pouring in the hot custard.

Custard Filling

  1. Heat the Milk: In a pot over medium heat, bring 1½ cups milk close to a boil.
  2. In a separate bowl, mix custard powder and sugar together.
  3. Slowly whisk the custard-sugar mix into the hot milk.
  4. Stir continuously until the custard thickens into a smooth, creamy texture.
  5. Immediately pour the hot custard over the cooled pie base and spread evenly with a spatula.
  6. Let it cool for about 10 minutes before slicing.
