Ingredients

 500g prawns/shrimp, raw, peeled & deveined

 1½ tbsp vegetable oil (or canola)

 1 tsp toasted sesame oil

 3 garlic cloves, finely minced

 2 tsp ginger, grated or finely chopped (optional)

 1 tsp chilli flakes (adjust to taste)

 ½ cup (125ml) water

 3 tbsp Sriracha

 2 tsp soy sauce (light or all-purpose)

 3 tbsp brown sugar (sub with white sugar)

Garnish (Optional)

 Sesame seeds

 Green onions, finely sliced

 Fresh red chillies, sliced


Steps

  1. Sear the Prawns

    • Heat vegetable oil in a large skillet over high heat.
    • Add half the prawns and sear for about 45 seconds per side until golden. Remove and set aside.
    • Repeat with the remaining prawns.
  2. Prepare the Sauce

    • Remove the skillet from the heat and allow it to cool slightly. Reduce heat to medium.
    • Return skillet to the stove and heat sesame oil.
    • Add garlic, ginger, and chilli flakes, stirring until the garlic turns golden.
  3. Simmer the Sauce

    • Pour in water, Sriracha, soy sauce, and brown sugar. Stir well.
    • Increase heat to medium-high and let the sauce simmer for about 3 minutes, until it thickens to a syrup-like consistency.
  4. Toss in the Prawns

    • Return the prawns to the pan, tossing them in the sauce to coat evenly.
    • Let them cook for 1-2 minutes until the sauce reduces and clings to the prawns.
  5. Final Touches & Serve

    • Garnish with sesame seeds, green onions, and fresh red chillies if desired.
    • Serve hot with steamed rice or cauliflower rice for a low-carb option.
