Ingredients
500g prawns/shrimp, raw, peeled & deveined
1½ tbsp vegetable oil (or canola)
1 tsp toasted sesame oil
3 garlic cloves, finely minced
2 tsp ginger, grated or finely chopped (optional)
1 tsp chilli flakes (adjust to taste)
½ cup (125ml) water
3 tbsp Sriracha
2 tsp soy sauce (light or all-purpose)
3 tbsp brown sugar (sub with white sugar)

Green onions, finely sliced
Fresh red chillies, sliced

Sear the Prawns
- Heat vegetable oil in a large skillet over high heat.
- Add half the prawns and sear for about 45 seconds per side until golden. Remove and set aside.
- Repeat with the remaining prawns.

- Remove the skillet from the heat and allow it to cool slightly. Reduce heat to medium.
- Return skillet to the stove and heat sesame oil.
- Add garlic, ginger, and chilli flakes, stirring until the garlic turns golden.

- Increase heat to medium-high and let the sauce simmer for about 3 minutes, until it thickens to a syrup-like consistency.

- Let them cook for 1-2 minutes until the sauce reduces and clings to the prawns.
