Here’s what you’ll need to whip up this Fijian favourite:

Ingredients (Serves 6)

  • 500g fresh, skinned, white fleshy local fish (cut into cubes) Spanish Mackeral (walu) or Snapper (Mahi-Mahi)
  • 1 tsp salt (or to taste)
  • Fresh lemon juice (enough to cover the fish—about 6 small lemons)
  • 400ml (13.5 oz) can of coconut cream/milk (or fresh)
  • 1 small ripe tomato, seeded and chopped
  • 1 cucumber (optional)
  • 1 small red or green chilli pepper, seeds removed and chopped
  • 2 tbsp diced bell pepper (any colour)
  • 1 scallion (green onion), chopped (white, light green, and dark green)
  • A few stems of coriander leaves (optional)

Instructions

  1.   Prepare the Fish: Start by thoroughly cleaning the fish. Remove any skin, bones, and brown meat, then cut the fish into small cubes.
  2.   Marinate in Lemon Juice: Place the cubed fish in a glass or plastic container, add the salt, and pour enough lemon juice to completely cover the fish. Stir to combine, then cover the bowl and refrigerate for about 3 hours.
    Tip: The lemon juice will “cook” the fish during this time, giving it that classic ceviche texture (ppaque).
  3.   Add Coconut Cream and Veggies: After 3 hours, take the fish out of the fridge and mix in the coconut cream, tomatoes, chili pepper, bell pepper, and scallions. Stir everything together until well combined.
  4.   Taste and Adjust: Taste for salt and add more if needed.
